Anyway, I made Nasi Lemak (Coconut Rice) served with hard boiled eggs, fresh sliced cucumber, anchovie sambal, toasted peanuts and rendang chicken for dinner tonite. We invited Chris over for a quick dinner and beer as we have to head out to the tennis courts later. =). Nasi Lemak is a very popular Malaysian Dish, has a little kick to it and is very flavorful.

I cheated using this mix I got from an online store, and added some Chicken and Lemon Grass. The rendang mix really surprised me as it turned out way better than expected. I've used different kind of ready made rendang mix in the past, and most of them are rather disappointing!
Therefore, I am recommending this paste to those who does not have the patience or time to grind spices, toast coconut and the whole works to prepare rendang. Give this Claypot brand Chicken Rendang mix a try! You just need to add chicken and water! I added some lemon grass to mine, to give it a more homemade look and flavor .=) I give this a 2 thumbs up!
